The system follows the flow of potentially harmful food – the course of food in a food service through the elaboration of the recipe, the delivery of products, the storage, the preparation, the conservation or presentation, the service, the refrigeration and storage of leftovers for the following days and the reheating of food.
Every step of the process presents risks of contamination that may be caused by wrong manipulation, which is why all those factors are important and must be considered.
